Heartnuts pesto
with whole wheat pasta

You can make this delicious dish with white flour, egg, or vegetable pasta, but whole wheat gives you just that much more fiber and flavor. Pesto is also wonderful with macaroni or as a sandwich spread.

You will need:

    2 c. fresh basil leaves
    1/4 c. Italian parsley leaves
    2 cloves garlic, peeled
    1/3 c. heartnuts, toasted

    1/2 c. olive oil
    1/2 c. freshly grated Parmesan cheese
    Pasta

1. Assemble all of your pesto ingredients, measured and ready to combine.

2. Before you prepare the pesto, start the water boiling for your pasta. Once you put the pasta in, make the pesto while the pasta cooks according to package directions.

3. In a blender or food processor, combine the basil leaves, parsley, heartnuts, and garlic until well chopped. With blender running, slowly add oil. FInally add cheese and process until the mixture is smooth.

4. Rinse and drain cooked pasta.

5. In a large bowl place the pasta, toss with the pesto. Serve with additional grated Paremsan and freshly cracked pepper. Garnish with chopped, toasted heartnuts.
