Heartnut cheese

This is a simple cheese, delicious and fun to make. It's easy to lighten with low-fat ingredients.

You will need:

    8 oz. pkg. cream cheese at room temperature
    1/2 c. heartnuts, toasted and chopped
    Fresh chives and parsley, chopped
    Freshly ground pepper
    Other spices to suit your taste

1. Line a shaped pan (we used heart-shaped muffin tins to make individual cheese hearts) with plastic wrap. Sprinkle heartnuts in a single layer on the bottom of each pan.

2. Mix the cheese and herbs.

3. Press the cheese mixture into the shaped pans with a spatula..

4. Cover the cheese in the pans with another sheet of plastic wrap. Refridgerate until ready to use.

5. To serve, unwrap each cheese shape and turn out onto a plate, nuts side up. Garnish with chopped herbs, pastry leaves, and surround with crackers.
